As many of you know I am a chef in real life. However, as many chefs will tell you after cooking all day the last thing we like to do is cook at home. Problem is fast food and eating out has got me into this situation. I am not saying to never eat out, but make it a treat and not the norm. So I have been coming up with new things to eat that are both satisfying and healthy.

One thing I love is Caribbean food. I love the spicy sweet mixture. There is nothing I like more than making my own jerk marinade and letting chicken swim in it for a day and grilling it outside. Well, problem with that is it was 5pm and 15 degrees outside so I took a few shortcuts.  I came up with a jerk marinated chicken breast on a bed of rice pilaf and a carrot pineapple slaw.

What you’ll need:

  • Boneless Skinless Chicken Breast
  • Maragaritaville (or another brand) Jerk Marinade
  • Long Grain Rice (1/4 cup dry rice per serving)
  • Shredded Carrots
  • Fresh Diced Pineapple (get the peeled at the store it’s much easier)
  • Fresh Lime Juice (1 lime)
  • 1 Tbsp Fresh Cilantro roughly chopped (dried will work just use half as much)
  • Olive Oil (not extra virgin)
  1. Marinate the chicken breast with the store bought marinade
  2. In a bowl combine the diced pineapple, lime juice, and cilantro
  3. while whisking slowly drizzle enough olive oil to thicken the liquid probably around 3 Tbsp.
  4. Add carrots to the slaw mixture, cover and leave in fridge until serving.
  5. Make the rice according to instructions. Put some of the bottled marinade or pineapple juice into the rice water for more flavor.
  6. I used a grill pan on top of the stove to cook the chicken, but you can use a skillet, or bake in the oven. Make sure the internal temperature is 165 degrees F
  7. Plate by putting the chicken breast on the bed of rice. Stir slaw in the bowl and put on top of the Chicken.

I really liked the cold slaw on the hot chicken it gave it nice balance. I would have liked a little more heat from spice. When I make my jerk I add habenero peppers to it. Next time I would add some red pepper flakes or diced chiles to the marinade. This whole meal per serving according to my app was 341 calories. I was very full and satisfied after this as well.

Last week I did something that I haven’t done in a really long time, I visited a book store.  Now personally I am not and have never been a really strong reader, but as I was driving past the local mall I was drawn to a Barnes and Noble.  My ever growing collection of Disney based books has mostly come from Amazon for the reasoning that the B&N in Dayton, Ohio doesn’t have a dedicated Disney section.  So I wandered around and found myself in the travel section and all at once a blast from my childhood caught my eye.

There it was, the rectangular wonder that is the Birnbaum’s 2015 Official Guide to Walt Disney World.  I still remember the day that my parents told me about our first trip to WDW and gave me the 1997 version which I read over and over again both before and after our trip.  I memorized every word of that guide from the letter from the editor to the coupons in the back.  That guide was marked, highlighted, and eventually started to deteriorate under the wear and tear it went through.  At that time it was my only known source or pictures and descriptions of everything at WDW.  Sure the Disney Channel would play some specials that would briefly give you glimpses of Pirates of the Caribbean or Spaceship Earth but nothing about all the other shops, rides, attractions, accommodations, or restaurants that you’d encounter while visiting.  I also tried to do some research on the internet before the 1997 trip but my two older sisters often tied up the phone lines which made the Birnbaum’s Guide my best choice.

Today, I have a firm grasp on what’s going on at WDW and where things are located thanks to previous experiences, websites, podcasts (shameless plug for Enchanted Tiki Talk), and the unending social media outposts dedicated to Walt Disney World however seeing the 2015 version on the stand was too much for me and I just had to buy it.  Upon leaving the store I found it funny that I traded $15.95 for 355 pages of information I already know.  The real draw though isn’t the words on the pages but as a remembrance of the happiness that my 1997 copy brought me.  Maybe I’m just a sentimental person but I find a lot of enjoyment reading the 2015 copy and seeing a lot of the same factoids and descriptions that were in my 1997 copy.

At this point in my Disney obsession most of the information in this guide is basic knowledge but I do recommend it for the first time trip taker because it is an innocent guide that is free of the preformed opinions of the masses that the internet offers.  Right now for me it serves as a nice reminder that I will get back to Orlando as soon as my daughter is out of diapers (my wife has been very strict about this policy).

We were missing New England the other day and decided the best thing to do about that was to go to Disney World! We went on the MDE app and got same day lunch reservations for Captain’s Grille at the Yacht Club Resort. Who says you have to plan in advance?

We headed down a few hours early so we could walk around BoardWalk (with it’s super creepy clown pool), Beach Club and Yacht Club. They are beautifully situated around Crescent Lake and are a nice little walk to Epcot’s International Gate entrance.

Stepping into the Yacht Club is very much like walking into Newport, RI. I’ve spent so much time there and Disney really has achieved that feel here. From the lighting (my obsession) to the wainscoting, the interior is dead on New England. I even like that the Cast Members are dressed in their nautical gear.

I always get smug when I’m about to try “authentic” NE Chowder (translated from chowdah). I am most often completely let down. Some restaurants may have the texture of the potatoes right but where’s the hint of pork? Don’t even get me started on the consistency! Well I can happily report that they pretty much nailed it. I would say it’s as good as you’ll get up north. Great job on something that is really a challenge. Because I’m picky, I would say the color was just a tad off. Didn’t effect the taste.

The Lobster Roll (translated from lobstah) was perfection. I would say it was one of the best I’ve ever had. The roll was toasted, the lobster moist and the dressing lightly used and thin. This came with fries that had their own dish so it wouldn’t get your sandwich warm. Perfection!

We didn’t have desert as I was saving myself for Beaches & Cream at the Beach Club Resort. No, we didn’t have the Kitchen Sink, it would be way too much for two people.

I look forward to visiting the Yacht Club or as I will rename it – Newport South.

Tony’s Town Square Restaurant – Magic Kingdom

Tony’s Town Square Restaurant is in a wonderful location with a great view of Main Street. It is adjacent to the Town Square Theater that features meet and greets with Talking Mickey Mouse and Tinkerbell. The interior is beautiful with touches and details from Lady and the Tramp. The fountain in the middle is great selfie spot!

We went for dinner with just adults. There were six of us and we were able to get same day ADR’s. Always check the MDE app because you never know when someone will cancel.

We started with the Calamari. We got two orders and needed them both! Did you know that calamari is the national appetizer of Rhode Island? It was perfectly seasoned and cooked well but not overcooked as can happen with calamari.

We had the Chicken Parmigiana, the Shrimp Scampi and the Cannelloni. All the dishes were prepared well but some of the portions were rather small and not unlike you could get at any Mom & Pop Italian restaurant. They lacked a wow factor. They were fine but we all expected much more.

Deserts were fantastic. We had the Tiramisu, Chocolate Cake and Pistachio Crème Brulee. They were all well worth the wait! They were all truly works of art! The presentation and flavor were perfect.

The service and atmosphere were great. The entrees needed some help but all in all I would give it a 3.5 out of 5. Glad we went but don’t necessarily have to go again.

1900 Park Fare is a buffet restaurant located inside the Grand Floridian Resort & Spa. You will want to give yourself plenty of time to enjoy the scenery before your meal. The sheer opulence of the GF takes a while to soak in. Walk around the grounds and check out the Alice in Wonderland themed children’s play area.

The restaurant is open from 8am to 9pm and WDW park passes are not required. You can get to the GF via car, boat, bus or monorail depending on where you are coming from. I have enjoyed meals at just about every time here and have not been disappointed. Not on the same day! The characters that you will meet do change from time to time. I have seen Cinderella, Prince Charming, Lady Tremaine, the stepsisters, Alice and Mary Poppins.

The children’s section of the buffet is lower and has Mickey head shaped plates. There’s no judging adults who use those plates, just in case you were thinking about it. The selections are what you would expect – breakfast has mini Mickey waffles, potato puffs, cheesy scrambled eggs etc. For dinner there are the staples of chicken nuggets, pizza and macaroni and cheese. Children do not have to stay in that section and can choose from the entire buffet.

San Angel Restaurante in Epcot’s Mexico

We recently visited San Angel Inn when out of town friends came to visit. I had never been but was open for anything! I had been inside the Mexican Pavilion many times and of course love the Grand Fiesta Tour with the Three Caballeros. I love the atmosphere as it feels like you are in small party town.

We started with the Sopa Azteca. The tortilla strips, avocado, cheese and peppers are brought in a dish and then have the soup poured over at your table. This was so fresh and so yummy, I would eat this every day! It’s not overly spicy but has just a hint of a kick.

For our entrée, we had the Carne Asada. This is a New York Strip, cooked to order with rice, guacamole, refried beans and a small enchilada. This is definitely a generous portion! There was definitely some heat to this dish but the guacamole cooled it down nicely. The meat was a tender as can be and the enchilada was a pleasant surprise.

Even after all that food, we went in for desert. My husband (Joe) and each got one and shared. We had the Crema Bavaria, which was so rich and decadent and the Mousse de Chocolate, which totally satisfied the urge for chocolate! Sharing is a strong word, you’ll want one of each for yourself!

So we left the restaurant full and happy and ended our trip to Mexico searching for Donald! Definitely give it a try and you won’t be disappointed. If I have one complaint it would be that the lighting is not great.

My Top 5 Drinks at Epcot’s World Showcase

The one thing I love most about World Showcase is being able to experience the culture and by culture I mean what alcoholic drinks do they have to quench my thirst. So I have put together a list of the top 5 drinks I must have while walking through World Showcase.

5. Germany and the Weinkeller

I always love stopping in Germany and grabbing a beer but there is one thing in Germany I can’t pass up. Riesling of any kind suits my palate nicely. They don’t always carry the same Riesling brand but its worth stopping in for a wine tasting. Plus you can always take a bottle to go.

4. America – Fife and Drum Tavern

Here lies another frozen concoction that is hard to pass up. The Frozen Red Stag Lemonade. This is a drink I make often at home on a hot day in the summer. The tartness from the lemonade and the sweet cherry in the bourbon make this a drink that must not be passed by. BTW grab an Jalapeno and Cheese Stuffed Pretzel while you are there. You wont be sorry.

3. United Kingdom

Guinness not much more can say about that. Except that I prefer to drink it inside the Rose and Crown Pub. That way I can enjoy the pub atmosphere and not feel rushed downing my Guinness.

2.  France try the Grand Marnier Orange Slush

Located next to the crepe stand you will find this tasty drink. Its so smooth and tasty but not too sweet, and so light and refreshing. It tastes more like an Orange Creamsicle but after finishing one you will want to try it again and again.

1. Mexico and La Cava del Tequila 

Located inside the Mexico Pavilion lies the greatest tequila bar you could ever dream of. You really can not go wrong with any margarita from La Cava. I can’t really choose a favorite because they are all so good. So I will leave that one up to you guys. But try the Blood Orange, Pineapple or even the Cucumber.

Of course food tastes are going to vary by the individual or family. I tried to make a list where you get a little more for you money than just food. Having some sort of entertainment is an added bonus. But here are 5 must try sit down restaurants for a first timer visiting Walt Disney World.

Ohana’s located at the Polynesian Village Resort.

This is an family style meal where all grilled meats are cooked on long skewers on an open flame consisting of Turkey, Pork and Sirloin.  Side dishes include stir-fired vegatables, fried dumplings and lo mein noodles. Desert is a delicious caramel bread pudding which you will most certainly want seconds of.  Kids will love this place just for the coconut races which happen every hour or so.

Character Breakfast Buffet 

There are several choices to choose from but some of my favorites are Chef Mickeys located at the Contemporary Resort with Mickey, Minnie, Goofy and Donald. Cape May Cafe at the Beach Club has Minnie, Donald and Goofy dressed in their bathing suits which gives you more of a relaxed feeling. Crystal Palace in the Magic Kingdom is a great spot to enjoy breakfast with Winnie the Pooh and Friends. Get an early reservation at 8 AM to experience Main St USA with few guests walking around.  All three choices will have the characters walking around and interacting with guests so everyone will have time for some fun photo ops.

50s Prime Time Cafe in Disney’s Hollywood Studios

This is a fun restaurant to experience with your family. Its a throw back to when you actually had to sit down as a family and eat your whole meal including the vegetables. Sitting in a 50’s inspired kitchen will certainly make the experience more enjoyable. Your going to find typical comfort food on the menu like Meatloaf or Chicken Pot Pie. Be sure to keep your elbows off the table or you could be in big trouble.

Hoop-Dee-Doo Musical Revue at Fort Wilderness Resort

This dinner show is a western themed vaudeville act. It takes place in Pioneer Hall located in Fort Wilderness resort. The food is served family style which includes a Salad, buckets of BBQ spare ribs and fried chicken, corn,and baked beans. Price includes
unlimited soda,  beer, wine and sangria as well as coffee and tea.

Biergarten located in the Germany Pavilion in Epcot 

This is a family style buffet that makes you feel like you are in Germany experiencing Oktoberfest. There is live entertainment as well as a dance floor for you or your kids to enjoy the sounds of the oompah band.  Not only can you get liters or beer here but you can enjoy tasty German food like bratwurst, pork schnitzel and spaetzle. Be advised that you may get seated with total strangers at your table.

Professionally I’ve held the titles of Account Executive, Business Development Manager, Relationship Manager, Key Accounts Manager, and Sales Engineer.   All those titles are just fancy words on a business card that mean I’m going to try to sell you something.  I spend all day going from place to place trying to convince people to use our product/service instead of our competitors.  Every day I meet with clients that I know so well that I invited them to my wedding and complete strangers who want nothing to do with me.  I log hours each day behind the wheel of my car to get to meetings, presentations, and cold calls.   I’ve experience the highest high of closing million dollar deals and the lowest low of being fired for lack of production.  At the end of every month no matter if I’m toasting success with champagne or failure with cheap beer I always find a way to put money aside for a Walt Disney World vacation.  Because I believe once you make the determination that a Walt Disney World vacation isn’t a once in a lifetime event you can plan it around getting relief from the things that drain you.  So I listed the three things that I’m not wild about in my profession and how I use my time in Orlando to escape.

Transportation –As I mentioned I spend a majority of my day behind the wheel of my car going from stop to stop day after day.  One of the great appeals of going to Walt Disney World for me is that I don’t have to drive.  We actually planned our last trip around being on roads as little as possible.  The only time we used transportation that involved roads was the Magical Express to and from the airport and bus trips to Downtown Disney and Animal Kingdom.  By staying at the Boardwalk Villas we used Friendships as much as possible and would walk through Epcot to get to the Monorail to visit Magic Kingdom.   I even refused to go on Tomorrowland Speedway because I was not going to do any driving all week.  I’m sure there are plenty of advantages to having a car on your WDW vacation, but I prefer to leave all the driving to Disney.

Communication – When I give out my business card to someone it has all of my information on it and I openly tell people to call, text, or email me at will.  My hours are no longer 8-5 but rather anytime the little light in the upper left hand corner of my phone is blinking.  If I don’t answer that email at 3AM I run the risk of my client finding someone that will.  I guess that is why my favorite part of Spaceship Earth are the scenes before mass communication was invented.   This is why once I board my flight to Orlando my phone gets put on airplane mode and stays on airplane mode I arrive safely at my house.  It’s my favorite function because it turns my phone into my camera and nothing more.  My wife handles all the communication with family, friends, and Disney and it’s a beautiful thing.

Rejection – In my line of work I get up every morning with the understanding that I’m going to be told no a lot more than I’m going to be told yes.  I understand I’m going to be told no through body language, via text, via email, and worst of all to my face.  The absolute best part of a trip to Walt Disney World is that you can go interact with thousands of cast members during your trip without hearing the word no.  They all go the extra mile to make sure that I’m having the best time possible.   When I’m at Walt Disney World I feel like I am the most important client that they have and that feeling is what keeps me coming back.

Once I was able to highlight the things I dealt with on a daily basis that I wanted to avoid I put together a great vacation plan.  I was able to return from vacation actually feeling refreshed and ready to get back to work.  It doesn’t hurt that going to Walt Disney World is like going to a sales clinic because no one is a better salesman than Mickey Mouse!
